Gazpacho Cold Soup
Forget about the stews and soups until fall. Right now fresh vegetables are plentiful which makes preparing this dish more affordable and tastier. "Gazpacho" is light, filling, cool.
- 1 large can tomato juice
- 1 clove garlic-grated 5 firm tomatoes, diced
- 1 ½ cups cucumbers, chopped
- 2 small cans sliced pimentos
- ¼ cup olive oil
- 1 large can sliced mushrooms
- 1 tbsp. Worcestershire
- 1 tsp. salt
- 4 tbsp. minced onion
- 1 tbsp. wine vinegar
Combine all ingredients, chill. After 24 hours add some chopped celery, serve chilled .
