    Gazpacho Cold Soup

    Forget about the stews and soups until fall. Right now fresh vegetables are plentiful which makes preparing this dish more affordable and tastier. "Gazpacho" is light, filling, cool.

     

    • 1 large can tomato juice
    • 1 clove garlic-grated 5 firm tomatoes, diced
    • 1 ½ cups cucumbers, chopped
    • 2 small cans sliced pimentos
    • ¼ cup olive oil
    • 1 large can sliced mushrooms
    • 1 tbsp. Worcestershire
    • 1 tsp. salt
    • 4 tbsp. minced onion
    • 1 tbsp. wine vinegar

     

    Combine all ingredients, chill. After 24 hours add some chopped celery, serve chilled .

    I make 10 gallons every year.
    I always save a quart or two of the mixture and drop in hard boiler eggs,
    The BEST pickled eggs I have ever eaten.

    5 Minute Chocolate Mug Cake - submitted by Tom Clark

    Put your mug in the microwave and cook for 3 minutes at 1000 watts (high). The cake will rise over the top of the mug, but don't be alarmed! Allow to cool a little, and tip out onto a plate if desired.
